ROASTED CHICKPEA INGREDIENTS:

drain and pat dry)
1 tsp olive oil
1 tsp apple cider vinegar
2 tsp thyme
2 garlic cloves, minced
½ tsp cayenne pepper (optional)

REMAINING INGREDIENTS:
1 tsp olive oil
¼ red onion, sliced
1 cup portobello mushrooms, cubed
salt & pepper to taste
1½ cup pineapple, cut into bite-sized pieces
juice from one lime (optional)
4 corn tortillas
